Black Bean & Avocado Salad with Vi Bites
- 2 packs Vi Bites Fiesta Nut

- 1 can black beans (drained & rinsed)
- 1 avocado (diced)
- 1 cup yellow or white corn
- 1 cup traditional cherry or heirloom cherry tomatoes (halved)
- 1 red pepper (diced)
- ¼ cup red onion (diced)
- ½ cup fresh cilantro (chopped)
- 1 lime (juice)
- sea salt & black pepper to taste
- Combine Vi Bites, beans, avocado, corn, tomatoes, bell pepper, onion and cilantro in a large salad bowl.
- Drizzle with lime juice.
- Toss and add salt and pepper to taste.
