Sprinkle Your Spring Salads with Vi Bites

Spring has finally sprung and we couldn’t be more excited about these delightful salads of the seasonal variety. Achieve a balanced diet and incorporate Vi Bites™ for an extra one-two, nutritional punch you’re sure to enjoy.

Kale & Avocado Salad with Fruit Frenzy Vi Bites + Lemon Poppy Seed Dressing

Ingredients:

  • 2-3 packs Fruit Frenzy Vi Bites
  • 4 cups chopped kale (stems removed)
  • 1 avocado (chopped)
  • 1/3 cup sliced almonds
  • ¼ cup low-fat, soft goat cheese (crumbled)
  • Pinch sea salt

Dressing:

  • 2 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 1 tsp. honey
  • ½ tsp. poppy seeds
  • 1/8 tsp. ground black pepper
  • Pinch sea salt

Directions:

  1. Place kale in a large bowl. Sprinkle with salt and massage leaves with hands until leaves are darker in color and tender.
  2. Add Vi Bites, avocado, almonds and cheese. Toss gently.

Dressing:

  1. In a small jar, combine oil, lemon juice, honey, poppy seeds, pepper and salt. Shake until well mixed.
  2. Drizzle dressing over salad and toss to coat.

Serves 4

Spring Greens with Candied Lemons, Goat Cheese & Fiesta Nut Vi Bites + Honey-Ginger Vinaigrette

Ingredients:

  • 2-3 packs Fiesta Nut Vi Bites
  • 8 cups spring greens
  • ¼ cup low-fat, soft goat cheese (crumbled)
  • 1 pint grape tomatoes (quartered)
  • ½ cup walnuts (toasted)

Candied Lemons:

  • 2 organic Meyer lemons (sliced into ¼ inch rounds)
  • 2 cups water
  • 2 cups unrefined brown sugar OR 1 cup honey

Dressing:

  • 1/3 cup olive oil
  • ¼ cup champagne vinegar
  • 2 tbsp. honey
  • ½ tsp. ginger (freshly grated)
  • 1 garlic clove (freshly grated)
  • ¼ tsp. salt
  • ¼ tsp. ground black pepper

Directions:

  1. Place greens in a large bowl.
  2. Add Vi Bites, tomatoes and walnuts. Toss gently
  3. Top with cheese and lemons.

Candied Lemons:

  1. Carefully remove seeds from lemon slices.
  2. Add water and sugar to a medium saucepan over medium-high heat and bring to a boil, whisking until sugar dissolves.
  3. Add lemon slices and reduce heat to medium-low or until simmering.
  4. Cover pan with parchment paper and simmer until lemon peels are translucent, about 30 minutes.
  5. Remove pan from heat and allow slices to cool and dry completely on a wire rack.

Dressing:

  1. Combine vinegar, honey, ginger, garlic, salt and pepper in a small bowl and whisk together.
  2. Stream in olive oil while constantly whisking until dressing comes together.
  3. Drizzle dressing over salad.
