Get the Skinny on these Naked Cakes

Our mouths are watering at the thought of (relatively) healthy cakes made with Vi-Shape® Shake Mix. We put our taste buds to the test and whipped up two delectable cake recipes that will keep party guests coming back for more. Keep in mind sweet treats are meant to be eaten on special occasions and are not part of a balanced diet.

Very Berry Zucchini Cake with Lemon Buttercream Frosting

Ingredients:

  • 4 scoops Vi-Shape Shake Mix
  • 2 cups blueberries
  • 2 cups raspberries
  • 2 cups grated and drained zucchini (1 large zucchini)
  • 3 eggs (beaten) OR 1 ½ bananas (mashed)
  • 3 cups whole wheat flour
  • 2 ¼ cups unrefined brown sugar OR 1 ½ cups honey
  • 1 ¼ cups vegetable oil
  • 6 tsp. baking powder
  • 2 tsp. vanilla extract
  • 1 tsp. salt
  • ¼ tsp. baking soda

Lemon Buttercream Frosting (optional):

  • 1 ½ avocados (peeled, pitted and mashed)
  • 1 lemon (juice and zest)
  • 2 ½ cups confectioner’s sugar
  • 1 tsp. pure vanilla extract
  • ¼ tsp. salt

Directions:

  1. Preheat oven to 350° F. Prepare 2, 8″ round cake pans.
  2. In a large bowl and using a hand mixer, combine eggs, oil, vanilla and sugar. Fold in zucchini.
  3. Slowly add in Vi-Shape, flour, salt, baking powder and baking soda.
  4. Gently fold in berries. Divide batter evenly between prepared cake pans.
  5. Bake 35 to 40 minutes or until knife inserted in center of cake comes out clean.
  6. Cool 20 minutes in pans then turn out onto wire racks to cool completely.

Frosting:

  1. Combine avocado, sugar and salt and beat until well combined.
  2. Add lemon juice and vanilla and continue to beat for another 3 to 5 minutes or until creamy. Fold in zest.

Top cake with frosting and frost in between layers rather than around the sides of the entire cake.

Serves 8-10

Strawberry Craze Bundt Cake

Ingredients:

  • 4 scoops Vi-Shape Shake Mix
  • 1 ½ cups strawberry puree
  • 6 strawberries (sliced for garnish)
  • 4 eggs (beaten) OR 2 bananas (mashed)
  • 3 cups coconut flour
  • 1 ½ cups unrefined brown sugar OR 1 cup honey
  • ¾ cup vegetable oil
  • 6 tsp. baking powder
  • 1 tsp. vanilla extract
  • 1 tsp. lemon juice
  • 1 tsp. salt
  • ¼ tsp. baking soda

Directions:

  1. Preheat oven to 325° F. Prepare 1 Bundt mold OR 2 bread pans
  2. In a large bowl, whisk to combine Vi-Shape, flour, sugar, salt and baking powder.
  3. Add strawberry puree, vegetable oil, vanilla and lemon juice to dry ingredients and whisk until combined.
  4. Add eggs to the batter and whisk until smooth. Pour batter into prepared cake pan(s).
  5. Bake for 25 to 30 minutes or until knife inserted in center of cake comes out clean.
  6. Cool 20 minutes in pan(s) then turn out onto wire rack to cool completely.

Serves 8-10
