Cucumber-Avocado-Kale Salad with Feta & Vi Bites
- 2 packs Vi Bites Glorious Greens

- 4 cups baby kale
- 1 cucumber (diced)
- 1 avocado (diced)
- ½ cup cherry tomatoes (halved)
- 1 ½ cups chickpeas (drained & rinsed)
- ½ cup reduced fat feta cheese
- ¼ cup red onion (diced)
- 1 lemon (juiced)
- 2 tbsp. extra virgin olive oil
- sea salt & black pepper to taste
- Combine Vi Bites, kale, cucumber, avocado, tomato, chickpeas, feta and onion in a large salad bowl.
- Drizzle with lemon juice and olive oil.
- Toss and add salt and pepper to taste.
