Today we have a delicious (and healthy) recipe to share with you courtesy of Jess, Editor of Jess is More. Jess is a blogger who tried out our Vi-Shape shake mix a few weeks ago and offered to make a few recipes since she was such a big fan.
For St. Patrick’s Day Jess put together a delicious Shamrock Vi-Shake and today we’re sharing her newest Vi-recipe, banana nut protein muffins. Below are the ingredients and directions you’ll need to make these delicious gluten-free muffins- again courtesy of Jess.
Makes 8 Muffins
4 scoops Vi-Shape Shake Mix
1/2 c stevia (for baking)
2 ripe bananas, mashed
4 tbsp butter, melted
1/4 tsp baking powder
1/8 tsp light salt
1/4 c skim milk
1/4 tsp vanilla extract
1/4 c chopped walnuts
Preheat oven to 350 degrees
Mix together wet ingredients (butter, stevia, bananas, vanilla, milk)
Mix together dry ingredients and slowly add to wet
Stir in chopped walnuts
Line cupcake pan with paper baking cups, fill cups approximately 3/4 full
Bake at 350 for 20 minutes
Remove from pan immediately
